Something for a sunny day

We've had three straight days of sunshine here in the northwest; a rare treat for February.  I've been wanting to try this recipe since Christmas, but it's never really come together.  I was always out of bacon, or out of corn, or both.  Then I tried a new-- to me -- type of frozen corn.   Stahlbush Island Farms -- it's the best.


Succotash of Soybeans, Corn and Bacon
adapted from the improvisational cook

Cook 3 slices of turkey bacon over moderate heat until done.  Remove from pan and add 1 1/2c. frozen, shelled soybeans and 1/3c. water.  Stir then cover for 3 minutes.  Add 1 1/2c. frozen corn.  Cover and cook until the soybeans and corn are cooked through -- about 3-4 minutes.  Remove from heat and add black pepper and salt to taste.  Chop the bacon into small pieces and mix in.
